Institute of Food Technologists - Developing Solutions for Developing Countries 2020
NutriSauce is a main entrée sauce taking inspiration from the classic African condiment, Piri Piri sauce, and designed to be served with African common meals such as ugali and other starchy dishes. Approximately 45% of total fruits and vegetables produced around the world go to waste, in Sub-Saharan Africa, nearly 90% of the waste occurs at the post-harvest, packaging and distribution levels. NutriSauce aims to repurpose these fruits and vegetables to reduce food waste and provide needed nutrition for people in developing countries. The appearance of the individual ingredients is irrelevant since it is a sauce and facilitates the use of ingredients that may have some sort of imperfection but are still edible. The blend of the ingredients in NutriSauce were carefully selected to meet an excellent source of Vitamin A, Vitamin C, Vitamin K, and Fiber; and a good source of Protein and Copper=
