American Society of Baking - Product Development Competition 2020
Hoppers was inspired by the classic American whoopie pie, a fun and convenient way to deliver sweet, chewy marshmallow sandwiched between soft and fluffy cake. The product consists of maple flavored marshmallow fluff between two cricket French-styled joconde cakes, topped with chocolate, pecans, and bacon bits. The travel-sized snack is gluten-free, provides an excellent source of protein, and, most importantly, delicious. By utilizing a popular food form and a Western flavor profile of maple bacon, the use of cricket powder will not be as glaring to the predominantly anti-insect consuming America.
